RECIPES AND EATING LIGHT

For all Eating Light posts

So here's my story.

Growing up, my diet consisted of noodles, noodles, and...noodles. Strangely enough I was always really really thin (don't hate-I was malnourished), because I refused to eat anything else, so I never had to really worry or think too much about it.  I quickly realized in college there was no one to make me noodles so Easy Mac totally blew my mind with it's innovative concept of absolutely delicious quick pasta.  Riiiight. That with Oreos for dessert were the best dinner a girl could ever ask for. This continued into my life in New York where meals just always seemed to get in the way of the twelve auditions and I had to get to that day. I was so bad in the kitchen I actually put a microwavable dinner in the toaster oven. No it's true.
Here is documented proof with my room mates looking on in horror. I can't believe Jen and I actually allowed those burnt hockey pucks touch our lips.

Then I turned 30.

My metabolism hit me like a hockey puck to the hips. Working on ships allowed me to expand my palette to sushi, raw foods, escargot, caviar, I mean the list goes on and on. But it also expanded my waist line.

So without making a long story longer, the recipes I will be sharing are very light. Most will be gluten free/vegan/vegetarian but my philosophy is this. No crazy diets or absolutes, in the home=healthy, but when we eat out cheating is allowed. That's a good balance right?
